Flaxseed Meal Cinnamon Bread

Phase 3 recipe

Flaxseed Meal Cinnamon Bread

1/4 C. Flaxseed Meal
1/2 Tsp. Baking Powder
1 tsp. Cinnamon
1 Packet Stevia
1 Egg
1 tsp. butter, softened
Mix dry ingredients in a small bowl. In a coffee mug mix butter and eggs and beat until smooth. Add dry ingredients and blend well. Cook in microwave or 1 1/2 – 2 minutes. Let it cool slightly and then slice up. Great with butter

Variation – add a few pieces of chopped apple.

    I love this bread and eat it with organic penut butter. Have you tried baking it in the oven? I wanted to try it in the oven and just wondering how long I should cook it for.

    Thanks for this recipe! My husband and I totally love it and it’s become almost a daily make for us! I tried one other variation that we love, and it’s just adding 1/4 cup of thawed, previously frozen, blueberries, mashed to the mix. It makes the batter a beautiful color and the taste is great. It’s even better the next day (we make several and refrigerate them), then eat them sliced, toasted and buttered. We have plans to make other fruit versions, plus some savory ones (pizza, or garlic and herb). Thanks Carol! :)

    If you leave out the baking powder you can cook it on your stove top and make very tasty pancakes with this. I have been doing this almost every morning and add blueberries or strawberries and top with berries cooked down with some splenda till soft. Makes a very yummy and filling breakfast

    I am on P3 and love peanut butter and would love to try peanut butter mug cake. Can I replace butter wiht peanut butter and maybe more peanuts?

    Sure, sounds yummy. Just be careful as some do gain with too many nuts.

    Hi guys, we are still loving this recipe and have an new addition to tell you about. To the above recipe at 2 tbsp of no sugar added applesauce. It really comes through in the end and we think it makes a lovely addition.

    I had this bread this morning adding chopped apples to it!  Great!  I loved it.  How often can I eat it and can i add a different fruit to it like strawberries?  I also put just a little taste of almond butter on it!  Wonderful!

    What a great idea. Just had this for breakfast. I kept a dash of baking soda in to get a little rise from the pancake. Also added 1/4 cup of cottage cheese on top. It was so good, I felt guilty the whole time I was eating. :)
