Beef & Cabbage Stir Fry – P2

Beef & Cabbage – P2

100 grams of lean beef or buffalo
2 cups green cabbage
4 tsp. LCM Signature Blend Seasoning
1 garlic clove, chopped
2 tsp. MCT oil (or water)

Slice beef or buffalo and sprinkle with half of the seasoning. In a medium skillet, add 1 teaspoon oil and cook meat on low to medium heat for about 3-5 minutes. Add cabbage, remaining oil and seasoning blending well. Cook for about 2 minutes or until cabbage is to desired consistency. I like mine more raw, and like a stir fry with a few sprays of Liquid Aminos. Some are effected by Liquid Aminos due to the salt content, but most do very well with it and it adds a nice stir fry flavor.

Variation: Beef & Cabbage Soup – Add 1-2 cups beef or chicken broth. Cook longer so cabbage is more cooked.

Cauliflower Steak Stir Fry an Easy hCG Recipe!

Cauliflower Steak Stir Fry

2 Tbs coconut oil
1 c. Cauliflower flowerets
1/2 c. green and red bell pepper pieces
1/4 c. onion pieces
1/4 c. Jicama pieces
3-4  oz steak
1-2 Tbs. Bragg Ginger & Sesame Salad Dressing
1-2 Tbs. Bragg Liquid Aminos
Salt & Pepper to taste

Heat coconut oil in skillet over medium heat. Add steak and cook for 2-3 minutes then add veggies and stir until cooked but not mushy. (cooked steak can also be added at the same time as veggies) Add pepper, salt, salad dressing and liquid aminos and stir for 1-2 minutes.

Spinach & Mozzarella Meatloaf

Spinach Mozzarella Meatloaf

 It took me awhile to perfect this recipe but it is now a family favorite.  ~Carol

1 1/2 lbs. lean ground turkey
1 egg, beaten
1/2 C. oat bran
3 tsp. coconut oil
1 C. onion, chopped
2 tsp. minced garlic
1/2 C. red pepper, chopped
1/2 C. green bell pepper, chopped
1 Tbsp. Jalapeno peppers, chopped fine (optional)
1 – 1 1/4 C. tomato sauce
1 1/2 tsp. basil
1 1/2 tsp. oregano
1 1/2 tsp. oregano
1/2 tsp. garlic powder or garlic salt
1 tsp. sea salt
1 tsp. pepper
10-12 cups fresh spinach (or 1 package frozen)
2 1/2 C. Mozzarella cheese 

In a mixing bowl combine turkey, egg and oat bran. Set aside. In a large skillet, saute onion, garlic and peppers in 2 tsp. coconut oil until onion and peppers are softened. Add tomato sauce and spices and cook until mixture simmers. Remove from pan and add to turkey mixture. In saucepan, heat 1 tsp. coconut oil and add spinach, stirring occasionally until cooked. Remove from heat and chop spinach. Place half of meat mixture in a loaf pan, then top with spinach and 2 cups cheese. Cover with remaining meat mixture. Drizzle additional tomato sauce over top, if desired. Bake at 350 for 1 hour. Sprinkle with additional mozzarella cheese and return to oven until cheese is melted. Let stand for 5 minutes, then slice and serve.

Homemade Salsa

If you want to have a great lunch try this Taco.  It is made with the leanest meat, grilled with your favorite spices. 
I used Ezekiel Tortillas and shredded cheese.  For toppings you can add homemade salsa and sour cream.   I made a small lettuce and tomato side.
You could use this recipe in Phase 2 VLCD Simeons protocol if you remove the tortilla and put on a bed of lettuce with the steak and homemade salsa. 
I have been purchasing a great homemade salsa from the deli that is all natural and no additives and sugar free.
