Chicken & Black Bean Soup

Chicken & Black Bean Soup (Stabilized P3-P4)

Chicken & Black Bean Soup

2-3 boneless skinless chicken breasts
2 Tbsp. coconut oil
1 C. chopped onion
3-4 carrots, sliced
1/4 C. green pepper, chopped
1/4 C. red pepper, chopped
3 garlic cloves, minced
2 tsp. cumin
2 tsp. oregano
1 tsp. chili powder
1 (4 oz) can green chilies
3 cans black beans, drained and rinsed
3 cans low sodium chicken broth (or broth from cooking chicken)
1 C. tomato sauce
1/4 tsp. sea salt
1/4 tsp. ground pepper

Cook chicken in water until cooked. Remove chicken from broth to cool and then cut into bite-size pieces. In a large sauce pan, heat coconut oil and add onion and garlic and saute for 3-5 minutes. Add carrots, peppers and spices and cook for 3-5 more minutes. Add broth, beans, chilies and tomato sauce and bring to a boil. Reduce heat to a medium heat and cook for 15 minutes, or until carrots are tender. If desired, split recipe in half and puree in a blender then return to the pot. Add chicken and cook until desired temperature and serve. Top with sour cream if desired.

Garlic Chicken Pizza

Garlic Chicken Pizza

Garlic Chicken Pizza for Phase 3 of the hCG diet

Crust:
2 cups mozzarella cheese, shredded
2 large organic eggs
2 Tbsp. ground flax seeds (flax meal)
2 Tbsp. coconut flour
1/2 tsp. baking powder

Preheat oven to 350. Mix ingredients together and make a pizza shape on a baking sheet. Bake for 30 minutes. Remove from oven and top with the sauce and toppings (see below).

Sauce:
2 Tbsp. butter or margarine, softened
2 cloves garlic, minced
2 Tbsp. chopped green onion
1/2 tsp. dried basil

Heat in a small saucepan on low heat until the butter is melted. Ad the garlic, onion and basil and mix until blended. Pour into a chilled dish to cool, and refrigerate until set. When set, spread over the crust and add toppings.

Toppings:
1 skinless, boneless chicken breast cooked and cut into bite size pieces.
2 Roma tomatoes, diced
1/2 cup chopped fresh cilantro
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese

Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese. Bake for 15 to 20 minutes or until center is cooked through.

White Chili Recipe for hCG Diet

White Chili for Phase 3 Simeones Protocol on the hCG Diet1 Tbsp Coconut oil

2 boneless, skinless chicken breasts, cut into bite size pieces
1/4 C. onion, chopped
1 C. organic (or homemade) chicken broth
1 can green chilies
A few slices of jalapeño, chopped
1/8 – 1/4 tsp. ground cayenne pepper
1 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. dried cilantro
1 tsp. garlic powder
Salt and pepper to taste
1 can Cannelloni beans, drained and rinsed
Monterey Jack cheese, shredded
2 green onions, sliced

Cook chicken and onions in coconut oil until chicken is cooked, about 5 minutes. Stir in rest of ingredients except beans. Simmer for 15 minutes. Stir in beans and simmer for 5 more minutes. Place in bowls and top with cheese and green onions.
