Winter Wonderland Contest

Contest Details:

Help create the best Hot Chocolate recipe for Phase 3.  You could make it for phase 2 for those who use Chocolate Delight but it will not be able to have any cream.

Ingredients Suggestions:
Cocoa and/or Carob Powder
Stevia or one from Carol’s approved sweetener list or two or more
Creams- some suggestions have been homemade whip cream, half and half, coconut or almond milk
Special flavors or ingredients to make yours unique

Make sure and include the amounts of each ingredient and how to combine them to make the best health hot chocolate.

The contest winner will be the person who ever gets the most “like” votes on their recipe in the comments section below this post.  The winner will be featured on the blog and will win either the Miracle Skinny Drops or the MSM combo pack, which includes the pills and the rejuvenating cream.

Strawberry Ice Cream

It’s that time of year! Time for ice cream and strawberries! Get out the ice cream maker and enjoy this wonderful treat!

Kim’s Strawberry Ice Cream

6 large eggs yolks
1/2 cup whole cane (Rapadura) sugar
2 cups heavy cream
Pinch fine sea salt
3 cups Strawberry Puree (recipe follows)

In a medium bowl lightly whisk the yolks together with a 1/4 cup of the sugar. Set aside.

In a non-reactive saucepan combine the remaining 1/4 cup of sugar, 1 1/2 cups of the cream, and the salt. Heat the cream mixture over medium-high heat until just boiling. Remove from the heat; whisk the eggs constantly while gradually pouring the hot liquid into the yolks. Return the egg mixture to the saucepan.

Cook the mixture while stirring constantly with a wooden spoon in a figure 8 motion, over medium-low heat, until thickened, about 5 minutes. When the ice cream mixture is properly cooked it coats the back of the spoon, is satiny thick, and free of any bubbles on the surface. (The ice cream base will taste slightly egg-y.) When the mixture is thickened pull it from the heat; add the reserved 1/2 cup cream, and strain it through a fine strainer into a medium bowl.

Set the bowl of ice cream base in a bowl of ice and whisk until cool. Add the strawberry puree.

Freeze the strawberry mixture in an ice cream machine according to the manufacturer’s instructions. (Take care not to over churn the ice cream or it can have a grainy texture.) Place the ice cream in the freezer to set up for at least 1 hour. Serve.

STRAWBERRY PUREE
4 cups strawberries, hulled and halved
1/4 cup honey, plus more as needed
1 tablespoons freshly squeezed lime, plus more if needed

Put the strawberries and the honey in a medium saucepan, and bring to a boil over medium-high heat. Reduce the heat to maintain a simmer; cook, stir frequently, until the berries breakdown and get juicy, about 10 minutes. Remove from the heat and let cool.

Mug Bread Strawberry and Cream Cheese Dessert

Cream Cheese Flaxseed Mug Bread

I followed Carol’s Recipe for the Cinnamon Bread. I did add just a little more cinnamon and another 1/2 pk of stevia.  Here is Carol’s Video for the Mug Bread Click Here

Cinnamon Mug Bread:

1/4 C. Flaxseed Meal
1/2 Tsp. Baking Powder
1 tsp. Cinnamon
1 Packet Stevia
1 Egg
1 tsp. butter, softened
Mix dry ingredients in a small bowl. In a coffee mug mix butter and eggs and beat until smooth. Add dry ingredients and blend well. Cook in microwave or 1 1/2 – 2 minutes. Let it cool slightly and then slice up. Great with butter.

Cream Cheese Icing:- Submitted by Tierra John
1-2oz. (I used about 1 and half, but prefer more…love it) Cream Cheese.
put in Microwave (35 seconds or until soft). Added a package of Stevia and blended well.
Strawberry Topping:
Strawberries (1/2 cup)
2 1/2 package (or to your taste) of Stevia.
Dash or Two of Cinnamon
Cooked Strawberries until thicken.
*Spread Cream Cheese mixture on the mold of bread, then topp w/ Strawberries. Enjoy! :-)

Vanilla Yogurt for P3

For a healthy snack give this a try:

1 C. Greek yogurt
1 tsp. Organic Vanilla flavoring
3-4 drops stevia

Mix together and enjoy!

Chocolate Yogurt for P3

SuperFood Chocolate Yogurt 1 C. Organic Greek Yogurt 1 scoop Amazing Grass SuperFood (Chocolate Drink Powder) 1 oz water 1 Tbsp. flax seed meal 1/2 tsp. Organic Vanilla flavoring 1/2 tsp. Stevia Mix 1 oz of water and 1 scoop powder and mix. Add yogurt, stevia and vanilla.
