Chocolate Delight (Almond Joy)

Chocolate Delight Variations

Classic Chocolate Delight

1 C. Coconut Oil, melted
1/2 – 1 C. cocoa (some do less to cut down on bitterness)
Stevia to taste (Flavored Stevia for variety)
Agave Nectar (P3 Only)
Fluff cocoa with a fork to break up any chunks. Add melted Coconut Oil.

Mix in Stevia adding more or less depending on taste. Add a few sticks or drops of Agava Nectar, if desired.

Chocolate Bites (A new twist to Chocolate Delight)

Chocolate Bites Delight P3

4 Tbsp coconut oil
1 square unsweetened chocolate
1 Tbsp. Carab powder (a lot less bitter than cocoa)
1/4-1/2 chopped raw nuts (I used almonds and mac nuts)
1/2 tsp. organic vanilla flavoring
1/2 tsp. liquid stevia

Melt coconut oil and chocolate in a small saucepan. In a separate bowl, mix rest of ingredients and then add the melted chocolate mixture. Place into a candy mold, or ice cube tray and pop them in the freezer.

Chocolate Delight with Nuts P3

5 Tbsp Coconut Oil, melted
2 Tbsp chopped walnuts, almonds, or Macadamia nuts
1 – 2 Tbsp. cocoa powder
Stevia to taste
2 Tbsp heavy whipping cream

Very good added to a chocolate protein shake.

Chocolate Delight with Vanilla

5 Tbsp Coconut Oil, melted
1 – 2 tsp. cocoa powder
1 pkg. Vanilla stevia
Liquid Stevia depending on taste

Chocolate Delight with Peanut Butter P3

5 Tbsp Coconut Oil, melted
1 – 2 tsp. cocoa powder
1 Tbsp. all natural peanut butter
stevia to taste

Peanut Butter Cups P3

5 Tbsp Coconut Oil, melted
1 – 2 tsp. cocoa powder
stevia to taste

Place small amount in muffin pan and freeze. Once it’s a solid place a scoop of all natural peanut butter and press down. Top with chocolate mixture until peanut butter is covered. Freeze. (You can prevent splitting by zapping it in the microwave long enough for the bottom layer to soften but not turn to liquid)

Mint Cups P3

5 Tbsp Coconut Oil, melted
1 – 2 tsp. cocoa powder
stevia to taste
Cream: cream cheese and peppermint stevia or mint Capella drops.

Place small amount in muffin pan and freeze. Once it’s a solid place a scoop of cream mixture  and press down with a spoon. Top with chocolate mixture until cream mixture is covered. Freeze. (You can prevent splitting by zapping it in the microwave long enough for the bottom layer to soften but not turn to liquid)

Almond Joy P3

5 Tbsp Coconut Oil, melted
1 – 2 tsp. cocoa powder
stevia to taste
Coconut flakes (unsweetened)
Raw almonds, chopped

Place small amount in muffin pan and sprinkle coconut flakes and almonds on top. Top with chocolate mixture until coconut is covered. Freeze. (You can prevent splitting by zapping it in the microwave long enough for the bottom layer to soften but not turn to liquid)

Organic Apple Day!

Organic Apple Friday!

Quick Apple Snack
1 organic apple
1 Tbsp peanut or Almond butter
Slice up the apples and spread each slice with the peanut or Almond butter or dip the apple into the butter.
Apple Dessert
3 Apples
1/4 C. water
1/2 C raw almonds, chopped
1/2 tsp raw honey
1/2 – 1 tsp Apple Pie spice
Core and slice apples into thin slices. Cook apples and water in a small saucepan over medium heat.
When mixture comes to a boil, reduce heat and stir in rest of ingredients. Cook on low heat for about 15 minutes.
Great served warm with some Greek Yogurt.
Baked Apples
4 Apples, sliced
1/4 C chopped raw nuts (pecans and walnuts are my favorite)
2 Tbsp lemon juice
1 tsp ground cinnamon or Apple Pie Spice.
1 Tbsp honey or maple syrup
Core apples and place in a small baking dish. Stand apples in small ovenproof dish, pour a little water around them. In a small bowl mix the nuts, lemon juice and spice. Fill apples with mixture. Drizzle  honey or maple syrup over the top. Bake for 25-30 mins. Great served with Greek Yogurt.

Candied Nuts

The holidays are just around the corner and fall is in the air.  You do not have to miss out on the treats of the season.  Try this candied nuts recipe for a healthy snack alternative.

Candied Nuts

Carol’s Candied Nuts

3 C. raw nuts
1/4 C. raw honey
1 1/2 Tbsp. butter
1/2 tsp. cinnamon

Topping:
1/2 tsp. cinnamon
1 1/2 tsp sugar substitute (I use Rapadura)

Place nuts in a skillet and cook over medium heat, stirring frequently until nuts are a lightly toasted. In a bowl mix honey, butter and cinnamon. Mix in the nuts until all the nuts are coated with the honey mixture. Bake at 250 degrees for 30 minutes. When you take the nuts out of the oven sprinkle with topping. Cool and enjoy.
