Chicken Vegetable Curry

Ingredients:

2 – 3 Chicken breasts, cut into bite-size pieces

3 Tbsp. Coconut Oil

2 c. Onion

1 Garlic clove, minced

2 Tbsp. Coconut Flour

½ c. Coconut Milk

1 can Vegetable Broth

½ c. Water

Veggies of choice – carrots, celery, broccoli, red and green bell peppers, etc., cut into bite-size pieces

2 Tbsp. Curry powder

½ tsp. Coriander

Melt oil in large saucepan over medium heat. Add chicken and cook until almost done. Add onions and garlic and continue to cook about 5 more minutes or until onions are translucent. Stir in flour, spices and vegetables then cook covered for 5 minutes. Serve over brown rice or Quinoa.

Spring Salad P2

Ingredients:

3.5 oz Fresh Spinach

1 Orange

3.5 oz Chicken

1 Tablespoon Coconut Oil

10 Drops of Stevia

Salt to taste

Take cooked chicken and cut into bite size pieces along with one orange.  Then mix 1 tablespoon of melted coconut oil with 10 drops of stevia and a small pinch of sea salt.  Combine all ingredients and mix well to coat all of the spinach with the coconut oil.  Enjoy!

Garlic Chicken Pizza

Garlic Chicken Pizza

Garlic Chicken Pizza for Phase 3 of the hCG diet

Crust:
2 cups mozzarella cheese, shredded
2 large organic eggs
2 Tbsp. ground flax seeds (flax meal)
2 Tbsp. coconut flour
1/2 tsp. baking powder

Preheat oven to 350. Mix ingredients together and make a pizza shape on a baking sheet. Bake for 30 minutes. Remove from oven and top with the sauce and toppings (see below).

Sauce:
2 Tbsp. butter or margarine, softened
2 cloves garlic, minced
2 Tbsp. chopped green onion
1/2 tsp. dried basil

Heat in a small saucepan on low heat until the butter is melted. Ad the garlic, onion and basil and mix until blended. Pour into a chilled dish to cool, and refrigerate until set. When set, spread over the crust and add toppings.

Toppings:
1 skinless, boneless chicken breast cooked and cut into bite size pieces.
2 Roma tomatoes, diced
1/2 cup chopped fresh cilantro
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese

Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese. Bake for 15 to 20 minutes or until center is cooked through.

Phase 3 Mini Frittatas

Mini Frittatas Phase 3


1/4 C. ricotta cheese
1/4 C. Parmesan cheese, grated
1/4 C. mozzarella cheese, shredded
1/2 C. cooked and chopped spinach
1/4 C. onion, chopped
1/4 C. mushrooms
1 egg
6 turkey pepperoni or 2 slices no sugar added bacon, chopped
Sprinkle of oregano, sea salt and pepper

Mix the egg and Ricotta cheese until well blended. Add rest of ingredients and fill muffin cups. Bake at 375 for 20 – 25 minutes or until done. Makes 3 muffins.
